Dak-deopbap is a staple of Korean fast-casual dining, built around the country's extraordinary enthusiasm for chicken — South Korea has more fried chicken restaurants per capita than almost any country on earth, and dak-deopbap channels that same love into a rice bowl format. The most common preparation braises chicken pieces in a gochujang and soy-based sauce with vegetables until the sauce reduces to a sticky, intensely flavoured glaze. Some versions are closer to a quick stir-fry with thin-sliced breast meat. Regional variations include ganjang-dak-deopbap (soy-braised, milder) popular in Gyeonggi Province and spicy dak-galbi-style versions from Chuncheon using thigh meat and rice cakes alongside the rice. Food courts in Korean shopping malls almost universally feature a dak-deopbap stall because it is fast, filling, and has near-universal appeal across age groups. The dish is often finished with a sprinkle of sesame seeds and thinly sliced green onion.
