Nakji-bokkeum occupies a proud place in Korean cuisine as one of the dishes most associated with powerful, unapologetic heat — a fiery pan of tentacles glistening with gochujang and sizzling in sesame oil that challenges even seasoned spice-lovers. The dish originates in Mokpo on the southern coast, where the mudflats of the Yellow Sea yield abundant small octopus that local cooks began stir-frying with the bold red pepper pastes that define the region's cuisine. Gwangalli Beach in Busan and the Nakji Street near Sindang Station in Seoul have also become celebrated addresses for the dish, each with decades-old restaurants that serve nothing else. Koreans joke that nakji-bokkeum is so spicy it makes you hiccup, but devotees insist the heat is the point — it opens the sinuses, clears the palate, and somehow makes the dish more addictive with every bite. Traditional wisdom holds that octopus revitalises the body and is particularly beneficial for those suffering from fatigue, and Korean office workers sometimes seek it out during exhausting work periods as a kind of spicy pick-me-up. The meal almost always ends with fried rice (bokkeum-bap) made by stirring rice directly into the remaining sauce in the pan.
